Easy Broccoli Salad

This sweet but tangy broccoli salad isn't just good for you, it's super easy to prepare as a light lunch, or cool side dish for your next cookout!

Ingredients:

3/4 cup mayonnaise
2 Tbl sugar
2 Tbl vinegar
6 cups fresh broccoli florets
6 slices crisply cooked bacon, crumbled
1 small red onion, chopped

Directions:

Mix mayonnaise, sugar and vinegar in large bowl. Add remaining ingredients and mix lightly. Cover and refrigerate at least one hour before serving.

Serves 10-12.

Wow! I have a similar recipe that I adapted from a classmate a couple of years ago. I add roasted red peppers to mine. This is such a great salad, isn't it?

What a great idea, MrOrph! I love roasted peppers, and I'll bet they make a great addition. I'm going to add them when I make this salad for a cookout we're having next weekend. Thanks for the tip!

Sounds really good and easy. I usually use turkey bacon instead of regular. Think I'll lose anything by doing so?

Jared, I don't think you'll lose a thing by using turkey bacon, especially if you're used to it. As a matter of fact, since I've recently gotten back to my semi-healthy eating habits, I may try it this way myself!
